Mmmm…barbecue chicken stuffed sweet potatoes. Yes, I know these are kinda different. But the recipe is pretty yummy. Actually that’s a lie…it rocks!
So all of my non-Paleo friends right about now are thinking: say what? Why would you put barbecue chicken in a sweet potato? Well, let me ask you this: Would you eat a BBQ chicken slider with a side of sweet potato fries? You would? Well there’s your answer. This meal just happens to combine all that good stuff in one tasty little package.
When you’re Paleo, you sometimes have to work harder to find unique ways to enjoy flavorful meals, while at the same time leaving out all the non-Paleo ingredients – like bread and sugar. Or fried food in mystery oils. And all those additives and preservatives food manufacturers and fast food chains add to all their so-called “food.”
The great thing about this recipe is that the Tangy Paleo BBQ Sauce (link to our recipe) is pure Paleo. In fact, I think it’s the real star of this meal. Add some shredded chicken in a baked sweet potato, mix it up with the sweet tanginess from the BBQ sauce, cut up some fresh avocado and green onions, sprinkle with bacon, and you’ve got yourself one tasty spud!
By the way, I tried 4 different versions of this BBQ sauce before calling the last batch perfect. I even recruited a non-Paleo taste-tester where at work who I love because she always tells me the truth. (And she’s one of my favorite people but that’s beside the point!) She tried an earlier version of the sauce and said it was okay, but she thought it had too much vinegar in it and needed to be a little sweeter. Now, I know because she’s not Paleo, her definition of sweet may be a little different than mine, but I want my recipes to taste great to everyone, not just Paleo people. So I went home reworked the recipe, and you know what? She was right. I like it better too! I love you Roxy! She will now be my official taste-tester.
The sauce has some honey for sweetness, but there’s a spicy zip at the end that makes it awesome. You can use it on burgers, pork, or just about anything. I keep some in the fridge at all times. We love it!
This stuffed sweet potato recipe makes the perfect Paleo lunch or dinner because it’s delicious and super-quick. Bake your potatoes in advance if you want, pick up a rotisserie chicken like I did, have the BBQ sauce handy and it’s basically a 2-minute heat and eat meal. I told you guys I would get these easy, quick recipes to you! I always try to come up with healthy recipes that will appeal to just about everyone. I’m pretty sure anyone who tries this will love it, but for my Paleo peeps, it’s one of those easy and hearty meals you’ll want to whip up again and again.
It’s nothing fancy, but it’s all kinds of healthy, and best of all, it tastes great! A cold beer alongside doesn’t hurt either!
