Paleo Tuna Avocado Tortilla Wraps

Have a tough time coming up with paleo lunch ideas? It’s one of the biggest problems I hear from newbies…

Lunch can be a real challenge when you’re eating paleo, especially if you head off to work every day. Some workplace lunchrooms just aren’t very paleo-friendly when it comes to whipping something up or even reheating it.

So here’s a great idea for lunch you might enjoy that’s super simple and doesn’t even require a microwave.

This delicious Paleo Tuna Avocado Tortilla Wrap is made with our really easy Paleo & Gluten-Free Tortillas Recipe. The possibilities are endless. These are stuffed with a yummy mix of tuna, avocado and a few other tasty things – one of my favorite combinations. (See the easy recipe below.) The only thing you’ll probably want to make in advance is the paleo tortillas which can easily be done in minutes the day or night before.

If you’re short on time and need to skip the tortillas, no problem. These taste great rolled up in big lettuce leaves too.

Just another paleo lunch option we hope helps keep you on track.

I packed these for lunch today and have learned to always take extras because there’s always somebody across the lunch table who hints at how awesome your food looks. And we all know it tastes even better!

Paleo Tuna Avocado Tortilla Wraps Lunch Recipe

Easy paleo lunch recipe for a tuna and avocado salad wrapped in a gluten-free tortilla.
Course Salad
Cuisine American
Servings 2 wraps

Ingredients
  

  • 1 can of tuna drained
  • 1 avocado pitted and mashed
  • 1/2 lemon juice of
  • 1/4 cup celery chopped
  • 1 tbsp of flat leaf parsley
  • 1 tbsp of minced white onion
  • 2-3 pepperoncini chopped
  • Salt & Pepper to taste
  • Tortillas – see link to easy PaleoNewbie Paleo & Gluten Free Tortillas Recipe in Notes below
  • Or, instead of a tortilla wrap, you can make a simple wrap with lettuce leaves

Instructions
 

  • Hand mix ingredients together
  • Roll up with tortilla
