This is a flavor-packed and aromatic paleo entrée soup I think you’re really going love from the very first steaming spoonful.
Meaty and robust, this is one of those must-have cold-weather crushers that will warm you right up.
Plus, it’s super-easy to make! Spend just a few minutes peeling and chopping, and this one can go from stovetop to soup bowl in about 30 minutes.
The spicy sausage adds a little Italian flair to the soup. Make yours with pork or turkey sausage – I used a package of ground Italian turkey that was on sale.
There’s a little bacon in this one too just to add some savory smokey flavor and more depth to the soup.
And what soup would be complete without some earthy goodness – this one includes chopped white sweet potatoes, carrots and spinach, all simmered to just the right tenderness.
There you have it – a complete paleo meal in your bowl. No need for sides. There’s plenty of yummy to fill your tummy in this soup.

Note too, the coconut milk doesn’t make the soup thick – it’s there to add just a little extra richness.
And as far as the broth, you can use either organic chicken broth or your own homemade chicken stock, either way the end result will be a very savory and satisfying soup.

Ingredients
- I lb ground hot Italian sausage
- 4 slices of uncooked bacon, chopped small
- 1 medium onion, diced
- 3 cloves of garlic, minced
- 3 white sweet potatoes, peeled and diced into about 1/2" pieces
- 1 large carrot, sliced thin
- 1 tsp Italian seasoning
- 5 cups chicken broth
- 1/2 cup full fat coconut milk
- 3 cups chopped spinach
- 2 tbs chopped basil
- 1/2 tsp cayenne pepper (adjust to your taste)
- Salt & pepper to taste
- Olive oil
Instructions
- In a large pot over medium heat, add the onion, sausage and bacon plus 2 tbs of olive oil. Stir just until sausage is cooked through
- If you have a lot of fat in the pot, drain most of it leaving a little behind for flavor
- Next add the minced garlic to the pot and cook for just 1 minute. Now add in the potatoes, carrots, Italian seasoning, and salt and pepper to the same pot. Stir over medium heat to combine flavors for about 5 minutes
- Add chicken broth to the pot and simmer for about 15 minutes, or until potatoes are tender
- Add coconut milk, spinach and basil – simmer for 5 minutes
- Finally stir in the cayenne – taste and add more if you want it spicier
- Ladle into soup bowls and enjoy!
