Grilled Chicken & Peach Salad w/Honey-Lime Vinaigrette

Celebrate the arrival of summer with this refreshingly different salad featuring warm grilled peaches, island-inspired grilled chicken, avocados, scallions, celery – plus an amazing vinaigrette…

Where did the recipe for this summer smorgasbord of a salad come from? Well, you! Not long ago I asked readers on my Paleo Newbie Facebook page what recipes you all would like to see this summer. Topping the list were grilled recipes and salads. This flavor-packed salad just happens to combine both your top picks in one easy to make dish!

I love a great summer salad – especially when you’re hungry and it includes some savory protein. Bring your hearty appetite to this one peeps – it’s very satisfying. And even though it’s 100% paleo and gluten-free, the whole family will want to dig into this one – and go back for seconds.

Plus this salad is a really good excuse to fire up the backyard grill (or if the weather’s not cooperating, a counter top grill if you have one).

The orchard-fresh, juicy and ripe peaches I used a couple of weeks ago to make my cobbler jam are still in the produce section at my local grocery – hopefully they’re waiting for you at your supermarket or farmer’s market too. [av_sidebar widget_area=’Lockerdome’ av_uid=’av-2n14s2′]

And don’t fret if you’ve never grilled peaches before – anyone can do it. Just slice them in half, remove the pit and place them flesh side down on the grill. Turn them a few minutes later to roast the backside, and you’re done. You may or may not get grill marks, but that doesn’t matter…you’ll have that warm, sweet and juicy flavor you can only get from a slightly sizzled peach.

For the chicken in this salad, I went with an island-style seasoning mix with some allspice, cinnamon and chipotle. Trust me on this one. It gives the chicken a little Caribbean pop of flavor that goes really well with the sweetness of the peaches.

I’ve also got a very simple, tangy vinaigrette for you to whip up with this recipe. It just takes a few minutes and really brings this dish together.

Paleo Grilled Chicken & Peach Salad with Honey-Lime Vinaigrette Recipe

Ingredients

  • 1 lb chicken breasts
  • 3/4 tsp salt
  • 1/2 tsp cinnamon
  • 1/2 tsp allspice
  • 1/2 tsp ground pepper
  • 1/4 tsp ground chipotle pepper
  • 1 large avocado, chopped or sliced
  • 2 fresh peaches, pitted and halved
  • 3 green onions, chopped
  • 2 celery ribs, diced
  • 3 strips of cooked bacon, crumbled
  • Salad greens (your choice)
  • Honey-Lime Vinaigrette
  • 3 Tbsp avocado oil (or virgin olive oil)
  • Juice of 1 lime (about 2 Tablespoons)
  • 1 tsp Dijon mustard
  • 1 tsp raw honey
  • 1/4 tsp garlic powder
  • Salt and pepper to taste

Instructions

  1. In a small bowl, simply combine all the vinaigrette ingredients above, and set aside
  2. Make the dry seasoning by combining the cinnamon, allspice, pepper, and chipotle and then sprinkle liberally over the chicken breasts
  3. Drizzle both sides of the seasoned chicken breasts with olive oil
  4. Next lightly coat the halved peaches with olive oil
  5. Oil grill rack and set temperature to medium to medium-high heat
  6. Place peaches face down on the hot grill for about 3-4 minutes, then turn over and cook for another 2 minutes - avoid overcooking, peaches should be slightly tender
  7. Next place chicken on the grill and cook about 5-7 minutes per side (internal temperature should be between 160-165ºF)
  8. Allow chicken and peaches to cool
  9. In a medium salad bowl, add chopped avocado, green onions, celery and your favorite salad greens
  10. Add sliced or cube cooked chicken and peaches to the salad mixing bowl, drizzle on the the Honey Lime Vinaigrette, and toss well.
  11. Garnish with crumbled bacon and enjoy!
